What happens if you don't respond to an office action?

If no response is filed and no extension is requested before the deadline, the application is abandoned. All filing fees are lost, and the priority date and any pending rights attached to the application are lost.

A new application can be filed, but it will carry a later priority date. Any similar marks filed by third parties between the original application date and the new filing date would have priority over the new application.
