Does the risk associated with the registration increase with the number of classes?

Yes. Each additional class increases the number of earlier trademark holders who potentially have grounds to oppose the application. An application covering a broad range of classes is more likely to conflict with an existing registration in one of them than one covering only the classes directly relevant to the business.

This is one of the reasons that registering only in classes reflecting genuine commercial activity is the recommended approach; it keeps opposition risk proportionate to actual need rather than inflating it unnecessarily.
